I’m not one of the cool cats who doesn’t subscribe to the idea of “New Year Resolutions are lame…” I enjoy eating and I often set some kinda goal around food and health. Hence part of the reason for this Whole30/Diabetic Diet Breakfast Ideas share out.
This year, my close friend asked me to be her support buddy in her Whole30 challenge. Without hesitation, I said I would support and join her. Being that we are both running around like chickens with our heads cut off, we agreed to share some of our fast and tasty recipe ideas with each other (and you) for the next 30 days. Coming off the holidays, my fridge is still stocked with left over pizza and Chinese, so I told her I’d join her on the meals this Wednesday – that’s tomorrow! *yikes*
Whole30/Diabetic Diet Breakfast Ideas
Diabetic Friendly Pesto Eggs & Friends
This is a diabetic friendly breakfast idea. The carb count is well below 45 grams and it carried me through well into a small snack. It's quick, easy and only has 2 ingredients. If you make the entire breakfast, it comes out to about 400 calories. That includes coffee, creamer, toast, peanut butter and the eggs. The eggs alone are only 276 calories.
- 2 tsp Kirkland Basil Pesto
- 3 Large Eggs
Heat the pan on medium and add 2 tsp. of pre-made Pesto. Swirl it around until bottom of pan is coated.
Crack eggs directly into pan and mix them around while you whistle a tune out loud. Cook eggs to desired consistency.
Serve with 1/2 slice of toast that has 2 tsp. of peanut butter smeared onto it. Add coffee with 1 tsp. of creamer along with a glass of water and call it a morning.
