Turkey Tortilla Salad

This is a protein, fiber packed turkey tortilla salad that will satisfy your veggie and meat cravings. Not only is it filling, but a great dish for toddlers to deconstruct and have their fill. We used the Smokey Lime Pequillo Pepper Dressing featured earlier in the website. It meshes well together. In the past, we’ve used a ranch dressing, which worked well.


  1. Olive Oil – 1 Tbs.
  2. Ground Turkey – 1 lb.
  3. Garlic Clove – 2
  4. Cinnamon – 1 tsp.
  5. Smoked Paprika – 1 Tbs.
  6. Coriander – 1 Tbs.
  7. Cumin – 2 Tbs.
  8. Salad Mix – 3 c. (we used power green mix)
  9. Tomatoes – 1/2 c.
  10. Kidney Beans – 3/4 c.
  11. Diced Red Onions – 1/4 c.
  12. Diced Red Pepper – 1/2 c.
  13. Shredded Cheddar – 1/2 c.
  14. Tortilla Chips & Smokey Lime Pequillo Pepper Dressing – garnish


  1. Heat olive oil and while browning turkey, add items 2 thru 7. Set aside when done and let cool.
  2. Place ground turkey and remaining items in a bowl. Toss & enjoy!
