Smoked Red Lentil & Red Pepper Soup

This week has been a really cold one & we’ve been stuck indoors for most of it, which makes it a challenge for our little guy. When it’s like this, we like to try to cook large batches of soup to store for fast hot meals.

Sometimes, we’ll make this soup with left over ham. I like to add seasoning early in most dishes so that the base really soaks in the flavors. As with most soups, if leftovers sit overnight in the fridge, it will be more flavorful the next day.

Ingredients

  1. Olive Oil – 1 Tbs.
  2. Leek – 1 thinly sliced
  3. Red Pepper – 1 diced
  4. Red Onion – 1 chopped
  5. Garlic – smashed 2 cloves
  6. Cumin – 1 tsp.
  7. Smoked Paprika – 1 tsp.
  8. Coriander – 1 tsp.
  9. Thyme – 1 Tbs.
  10. Red Lentils – 9 oz.
  11. Chopped Tomatoes – 14 oz.
  12. Water – 5 cups
  13. Chicken Bouillon – 5 tsp.
  14. Bay Leaf – 2
  15. Croutons – garnish

Directions

  1. Heat oil. Place items 2 thru 9 in a pot over medium heat & stir occasionally for about 10 minutes.
  2. Add items 10 thru 14, stir & bring to boil.
  3. Cover & simmer for 45 minutes.
