No Bake Peanut Butter Apple Muesli Balls

What do you do when your double oven decides to call it quits just before a major baking event – like holiday cookie baking? Well, in my case, after I picked my jaw up from the floor and asked the hubs to order the part and work his mechanical magic as soon as it arrived, I went to my easy No Bake Peanut Butter Apple Muesli Balls recipe.

If you’re just making the balls, it’ll only take 30 minutes from start to first bite.

I’ve made this before without the apple muesli and though it was good, we like this version better. The cinnamon and apple gave it a nice twist and the muesli added to the texture. It’s a great post workout treat.

No Bake Peanut Butter Apple Muesli Balls

A couple of things to consider when making this recipe. You can just make the balls or you could coat them in chocolate. Both milk and dark chocolate are wonderful compliments to this tasty treat. In our case, we make a mix of both. If you’re going to coat them in chocolate, you can use our recipe below.

When making these, we like to freeze a batch for later snacking. We found that freezing them with or without the chocolate coating made no difference. Just be sure to give them time to thaw out a bit before biting in. Unless you want to see the dentist!

Instructions
No Bake Peanut Butter Apple Muesli Balls
  1. Stir together peanut butter, powdered sugar, apple muesli and softened butter until well mixed.
  2. Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet.
  3. Let balls stand for 20 minutes. If you're able to place them in the fridge, they should dry a little faster.
  4. Store tightly covered in a cool dry place. Whatever you do...try not to eat all of them.
Dipping Chocolate - optional
  1. Combine olive oil and chocolate chips in small sauce pan. Melt over medium heat and stir constantly. After 30 seconds, pull from heat and quickly stir to melt remaining chips.
    1 Minute Chocolate Coating - Sans Shortening -
  2. Drop balls one at a time in melted chocolate.
  3. Using a fork, remove from the chocolate, letting excess chocolate drip off.
  4. Place back on the waxed paper and top with sprinkles, if desired.
  5. Let stand at room temperature until dry.
