Homemade 25 Minute Broccoli Soup Recipe

I remember my nonna making this dish when I was a kid. She used to use pork shoulder in her recipe. I recommend using that instead of the bacon, if you have a little extra time. You’ll just need to brown it on all sides and let it cook in the soup a little longer. To cut down on time, I use bacon strips in this Homemade 25 Minute Broccoli Soup Recipe. Nonna used to put pasta in her recipe. We use homemade croutons instead.

This will make 5 servings and freezes well. Some people like to add a mixture of butter, flour and milk right before serving. This gives it a creamy texture. We like to keep the recipe clean and simple.

Homemade 25 Minute Broccoli Soup Recipe

Ingredients

  1. Olive Oil – 1 Tbs.
  2. Sliced Bacon, chopped – 5
  3. Celery Sticks, chopped – 2
  4. Large Red Onion, diced – 1/3
  5. Broccoli, chopped – 2 medium heads
  6. Water – 4 c.
  7. Tomato Bouillon with Chicken Flavor – 4 tsp.
  8. Garlic, minced – 1 Tbs.
  9. Bacon Slices – 1 per bowl as garnish
  10. Paprika – garnish

Directions

  1. Saute celery, onions, bacon in olive oil for about 5 minutes.
  2. While base is sautéing, chop up broccoli heads. This doesn’t have to be pretty. You’ll purée them later.
  3. Add broccoli, garlic, water and bouillon and increase to medium high heat. Bring to boil w/ lid on.
  4. Lower heat to medium, stir, cover and cook for 10 minutes.
  5. Transfer broccoli to blender and pulverize!
  6. Return broccoli to pot and stir. Cover and warm through – about 5 minutes.
  7. Garnish with paprika and bacon pieces.
