Gluten Free Strawberry Vanilla Breakfast Muffins

Chia, Strawberries, and Vanilla…Oh My!

We’re experimenting with breakfast options again and whipped up these Gluten Free Strawberry Vanilla Breakfast Muffins. If you’re not watching your gluten intake, you can make these with regular flour. I like using ground frozen strawberries in this mix because it evenly spreads the fruity flavor throughout each bite.

Tip: I like to have my batter set to go so that I can place it in each liner as I go.

Preheat oven to 400ºF & line cupcake tin with parchment paper or non-stick spray. In small bowl, mix 1 Tbs. powdered sugar and 2 Tbs. brown sugar and set aside.

Place 1.5 c. Gluten Free Pancake & Baking Mix, 1/2 tsp. Salt,, 2 tsp. Baking Powder and 2 tsp. Chia Seeds in bowl and combine well. Place 4 Tbs. Olive Oil, 1 Egg, 1/2 c. Almond Milk, and 1.5 tsp. Almond Extract in bowl or cup and mix well.

Use 1c. of fresh or frozen strawberries. If frozen, I like to use a chopper to pulverize. If fresh, you could do the same or chop/dice them.

Fold 1 c. chopped or ground strawberries into batter. Don’t over mix!

Fill cupcake tin 1/2 or 3/4 of the way. I use an ice cream scoop to do this – perfect tool.

In small bowl, mix 1 Tbs. powdered sugar and 2 Tbs. brown sugar and set aside.

Sprinkle 1/2 tsp. powder & brown sugar topping on each cupcake.

Bake for 20 minutes on center rack.

Bake for 20 minutes in 400 degree oven, cool and top with 1/2 tsp powdered/brown sugar mix (optional)

Ingredients

Batter

  1. Gluten Free Pancake & Baking Mix – 1.5 c.
  2. Salt – 1/2 tsp.
  3. Baking Powder – 2 tsp.
  4. Chia Seeds – 2 tsp.
  5. Olive Oil – 4 Tbs.
  6. Egg – 1 (Egg Crackin’ Secret)
  7. Almond Milk – 1/2 c.
  8. Almond Extract – 1.5 tsp.
  9. Fresh or Frozen Strawberries (ground or chopped) – 1 c.

Topping

  • Powdered Sugar – 1 Tbs.
  • Brown Sugar – 2 Tbs.

Directions

  1. Preheat oven to 400ºF & line cupcake tin with parchment paper or non-stick spray. In small bowl, mix 1 Tbs. powdered sugar and 2 Tbs. brown sugar and set aside.
  2. Place items 1 through 4 in a bowl and combine well.
  3. Mix items 5 through 8 in a bowl and mix well. Remember our Egg Crackin’ Secret!
  4. Fold chopped or ground strawberries into batter. Don’t over mix!
  5. Fill cupcake tin 1/2 or 3/4 of the way. I use an ice cream scoop to do this – perfect tool.
  6. Sprinkle 1/2 tsp. powder & brown sugar topping on each cupcake.
  7. Bake for 20 minutes on center rack.
  8. Cool & sprinkle 1/2 tsp. powder & brown sugar topping on each cupcake, if desired.
