Easy Chicken n Pea Tomato Sauce

Our Traditional Dish

My paternal grandparents were from Sicily. I remember how much they enjoyed feeding the family every Sunday. The standard dish was pasta and tomato sauce with some kind of meat. In most cases, it was sausage and small chunks of meat that were left to stew in the sauce as it bubbled on the stove-top. But sometimes, they would make red sauce with chicken legs and peas. This Easy Chicken n Pea Tomato Sauce is still a favorite in Our Cookery. We like to serve it over fresh pasta, sautéed zucchini, eggplant or rice. This recipe serves 6 to 8 hungry peeps, depending on how much they like to go for seconds and bread dip.

Easy Chicken n Pea Tomato Sauce

This will take you 20 minutes to prep and should be ready in one hour. I like to double this batch and freeze in small amounts for later. Another tip with sauces and soups, if you make them a day ahead and leave in the fridge overnight, they become more flavorful. Why? I think it’s because the fridge fairies sprinkle their unicorn dust on it when the door closes.

In large pot, heat olive oil (or butter) over medium heat. Add red onions and sauté until they become slightly transparent (about 10 minutes).

Add garlic and chicken legs. Cook legs so skin turns a light golden brown (about 5 minutes). Add wine – Eh! Don’t you dare think about drinking it! Keep cooking on medium heat until wine evaporates. You’ll have to stand around and supervise this process, so now you can pour yourself a glass. If you’re around children, forego this step until you have adult back-up available.

Add tomato sauce, water, bay leaves, salt, pepper and basil to pot. Stir well, cover and bring to a boil. Tip: after adding tomato sauce, use the same cans to fill with water and transfer water between cans to pick up more sauce.

Reduce heat to lowest setting while maintaining boil. Stir occasionally and let cook for 30 minutes with lid off.

Add frozen peas at the end of cooking and stir well. They’ll heat up nicely without overcooking.

Serve over pasta, polenta, cooked zucchini, spaghetti squash, etc.

Ingredients

  1. Olive Oil or Butter – 2 Tbs.
  2. Red Onion, diced – 1/2 c.
  3. Garlic Cloves – 2 or 4
  4. Chicken Legs w/ Skin – 5
  5. Red Wine – 1/3 c.
  6. 15 oz. Tomato Sauce Cans – 3
  7. Water – 30 oz.
  8. Basil, chopped – 1/2 c.
  9. Bay leaves – 2 to 4
  10. Salt & Pepper – 2 tsp. ea.
  11. Frozen Green Peas – 1 to 2 c.
