How can you go wrong with pumpkin and chocolate? You can’t. These Chocolate Pumpkin Power Muffins are sure to hit the spot.
On a trip to Costco, we bought a huge pack of Kodiak Power Cake Mix for waffles and flapjacks. Honestly, the recipe on the box is kinda bland. You’d be wise to add your own flavorful twists. A few drops of almond, vanilla or lemon extract go a long way in making these tasty. We made pancakes with the mix, but we decided to use it to add a muffin option to our morning rotation. I made a big batch of these on Sunday afternoon for the week and froze the rest. They defrost well and taste pretty fantastic.
Chocolate Pumpkin Power Muffins
This recipe makes a total of 18 muffins. Our toddler absolutely loved eating them too.
- Preheat oven to 350ºF.
- Place all ingredients in a bowl and mix well.
- Fill each muffin liner 3/4 full and bake for 15 minutes. Test a muffin with toothpick or knife to make sure it comes out clean before pulling out of the oven.
- Once cooled, sprinkle with a mixture of cinnamon and sugar.
