Chocolate Pumpkin Power Muffins

Chocolate Pumpkin Power Muffins

How can you go wrong with pumpkin and chocolate? You can’t. These Chocolate Pumpkin Power Muffins are sure to hit the spot.

On a trip to Costco, we bought a huge pack of Kodiak Power Cake Mix for waffles and flapjacks. Honestly, the recipe on the box is kinda bland. You’d be wise to add your own flavorful twists. A few drops of almond, vanilla or lemon extract go a long way in making these tasty. We made pancakes with the mix, but we decided to use it to add a muffin option to our morning rotation. I made a big batch of these on Sunday afternoon for the week and froze the rest. They defrost well and taste pretty fantastic.

Chocolate Pumpkin Power Muffins

This recipe makes a total of 18 muffins. Our toddler absolutely loved eating them too.

Directions

  1. Preheat oven to 350ºF.
  2. Place all ingredients in a bowl and mix well.
  3. Fill each muffin liner 3/4 full and bake for 15 minutes. Test a muffin with toothpick or knife to make sure it comes out clean before pulling out of the oven.
  4. Once cooled, sprinkle with a mixture of cinnamon and sugar.

Once cooled, sprinkle with cinnamon sugar. How do you vary your breakfast or snack options? Or do you have a muffin recipe that is out of this world?

  15. No way, I absolutely loooove pumpkin and chocolate combinations 😀 I was wondering if it’s okay to skip the egg in the recipe…You know to make it vegan friendly? Because I think using nut milk will be fine instead of cow’s milk as well as vegetable butter, but the egg is the tricky part , haha
I think I’m trying and I’ll post it here later! 😀
