Baked Pasta Hash

What better way to enjoy some leftover meat sauce and meatballs than with a baked pasta hash? This was a great dish to make with our little guy’s help. He was able to practice his “stihh, stihh, stihh!” technique and papa was able to get an upper arm workout trying to make sure parts of the dish didn’t up on the walls before we could bake it. The great thing about this dish is that the top has a crispy finish to it. Enjoy!

Ingredients

  1. Olive Oil – 1 Tbs.
  2. Diced Red Peppers – 3 large
  3. Garlic – 2 tsp.
  4. Pasta (Fusilli or something else) – 1 lb.
  5. Grated Parmesan/Romano Cheese – 1/2 c.
  6. Mozzarella – 1 c.
  7. Meatballs – 5
  8. Sauce – 2 c.
  9. Beaten Eggs – 2
  10. Oregano – 1 Tbs.
  11. Olive Oil – 1 Tbs.
  12. Mozzarella – 1 c. (topping)
  13. Parmesan/Romano – 1/4 c. (topping)

Directions

  1. Heat olive oil and add red peppers & garlic. Saute on medium for 10 minutes, stirring so they don’t burn.
  2. Boil a pot of water a & cook pasta for 3 minutes. Drain & set aside.
  3. In a large bowl, combine peppers, pasta & ingredients 5 thru 11 and stir. Be sure to break apart the meatballs.
  4. Coat large baking dish with nonstick spray and evenly distribute the mixture into dish.
  5. Sprinkle item 12 & 11 on top and bake uncovered for 30 minutes.
