We’ve been trying to eat healthier lately and wanted to share a recipe that we love to make ahead of time in big batches and freeze for later. Not only is it packed with healthy fiber, but it’s low sodium too. This Ancho Chili Pepper Black Beans recipe is great as a side, scrambled egg mix in, taco / burrito filling or main dish. If you add cream cheese to the mix, it’s transformed into a dip. This recipe serves 3 to 6 depending how it’s served.

I like to prep all my ingredients before I start cooking.
Ancho Chili Pepper Black Beans
Warm olive oil over medium heat and add onions. Cook over medium heat until translucent.

Add ingredients 3 through 5 and mix well.

Add ingredients 6 through 11, mix and cook over medium heat for 1 to 2 minutes.

Add black beans, stir and cook for 1 to 2 minutes.

Add water and bay leaf.

Cover and bring to a boil. Reduce heat to lowest setting while maintaining a boil and cook for 20 minutes.

Remove lid, cool for 5 minutes and serve.

Ingredients

  1. Extra Virgin Olive Oil – 1 Tbs.
  2. Diced Red Onion – 1/2
  3. Diced Marconi Pepper – 1
  4. Minced Garlic – 2 cloves
  5. Diced Tomatoes – 1/2 c.
  6. Cumin– 1/2 Tbs.
  7. Smoked Spanish Paprika – 1/2 Tbs.
  8. Coriander– 1/2 Tbs.
  9. Turmeric– 1 tsp.
  10. Ancho Chili Pepper – 1/2 tsp.
  11. Tomato Bouillon with Chicken Flavor – 1 Tbs.
  12. Low Sodium Black Beans – 15 oz. (rinse to reduce sodium)
  13. Water – 2/3 c.
  14. Bay Leaves – 1 or 2

Directions

  1. Warm olive oil over medium heat and add onions. Cook over medium heat until translucent.
  2. Add ingredients 3 through 5 and mix well.
  3. Add ingredients 6 through 11, mix and cook over medium heat for 1 to 2 minutes.
  4. Add black beans, stir and cook for 1 to 2 minutes.
  5. Add water and bay leaf. Cover and bring to a boil. Reduce heat to lowest setting while maintaining a boil and cook for 20 minutes.
  6. Remove lid, cool for 5 minutes and serve.

    • Yup, just add one more cup of water and you’re set. We do this often. I mentioned all the ways we serve this in the blog 🙂
