In our cookery, it’s no secret that my mom is a great chef. She has certain recipe staples that we love to have her make over and over for us. This 30 Minute Cabbage & Sausage Soup is one of those dishes.

I’m sharing this out on National Cabbage Day and National Acts of Kindness Day. I had no idea that February 17th was special like that. Maybe you could make a batch of this and share it with your friends and family.

The last time she made it, the weather decided to set the perfect backdrop – it snowed all day long. There’s nothing like a bowl of steaming soup on a subfreezing day. She took a basic recipe and added her own twist to it. This soup can be accompanied by some warm bread or you could add some rice, quinoa or barley in the final cooking stages.

Ready in just under 30 minutes and it's packed with protein and veggies. This is a low-carb, diabetic friendly recipe. Enjoy with a side of bread and a glass of wine. Mmmm...sausage and wine!

Instructions
  1. Place olive oil, italian sausage, garlic, yellow onion and carrots in frying pan and sauté on medium heat until onion is translucent & sausage is halfway browned.
  2. Add red cabbage, green beans, tomatoes, and fresh basil to pot and stir for a few minutes to absorb the sausage flavor.
  3. Now include beef bullion, oregano and add enough water (about 4 cups) to cover all items then bring to a boil.
  4. Lower heat to medium or medium low, cover & cook for about 10 minutes, until veggies are tender.
  5. Add item zucchini, bring back to a boil and cook covered for 5 minutes.
  6. Garnish with crushed red pepper to add some heat.
